WHere is a simplified take on a cocktail found on the seasonal menu. This is a party-sized pre-mixed which is packed full of tastes of the holiday season, making it perfect for hosting a holiday party. Reserve the remaining syrup for morning drinks, sweets, or to make another batch of bikinis.
Bikini Recipe
Serves 10 people
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Premix (produces 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
Making the Citrus Syrup: Put all the components in a pan, heat until it reaches a gentle boil, stirring to dissolve. Then, remove from the stove allowing it to cool down fully. Transfer into a sealable bottle, seal and store in the refrigerator, where it will keep for about four weeks.
To make Batch Mix: Combine every spirits and syrup into a big jug, allow it to infuse for one hour, then pass it through best through a fine cloth, so it's perfectly clear.
To serve: Pour 85ml of the batch mix to a stirring glass filled with ice, and agitate gently for about 60 seconds until cold. Filter to a frosted cocktail glass or similar, top with some cranberries and finish using a light spray with the mandarin essence over the drink.
